Chicken, broccoli casserole and the healing process.

I want to include one of my favorite, easy recipes today because it is very closely tied to my idea of comfort food.

Easy Chicken, Broccoli Casserole:
2 or 3 chicken breasts, cooked through and cubed
1 can of cream of mushroom soup
1 package frozen (steam bag) broccoli
3 cups (or more) of sharp cheddar cheese
2 cups rice
2 tbs butter
salt and pepper to taste

Preheat oven to 350 degrees. Put rice on to boil (I use 1 part rice to 2 parts water, so 4 cups of water for the 2 cups of rice). I add the 2 tbs butter and a little salt to the water before the rice is added. While the rice is cooking, cube the chicken and cook it until no longer pink in a skillet. If you have frozen broccoli, put it in the microwave for less time than it says on the bag (I usually do 5 minutes) because when you add it to the casserole and bake it you don't want it to get gooey and gross. Once the rice is finished, add the cheese, the cream of mushroom soup, chicken, and the broccoli to the pot and mix. Spread all of the ingredients into a casserole pan and sprinkle the top with cheese and breadcrumbs. Bake for about 20 minutes or until the cheese on top is browned.

Now: a little bit about why I wanted to post this recipe. I've gone through the worst break up of my life this week and part of last week. I've been staying at my parents' house because I didn't feel safe at my apartment, but last night I returned. I've been trying to cope with the loneliness and emptiness of the house, but it is definitely not easy. Thus, the desire to eat easy, comforting, cheesy food. I recommend this recipe for anyone who is going through a similar situation.
